Tell us more about what you want to accomplish.
1. will it be a daily driver?
2. Have any mpg requirements?
3. Have any power requirements?
4. Cost range(how much $$$ do you want to put into it)?
etc.
That'll help alot in recomendations

460 ALL THE WAY!
If you aren't concerned about mpg, a 460 will easily be capable of 400hp and huge torque(important in a heavy truck).
If you wanted that much out of a 302, you are looking at a fairly radical cam(not so much fun to drive on the street...does give you a nice lope though) and/or some sort of power adder if you didn't want to go with a wild cam.
i'm not a ford guy and don't know much about ford transmissions, so i can't help you there. Also, I don't know all that much about their motors either(just what i know from keeping an eye on the competition  ), so someone may have a good reason not to go with a 460. but if cost and mpg isn't a concern, a 460 seems the easiest way to get your desired numbers.
However, a 302 with nitrous would likely be cheaper, and a 302 with FI would be fun
Like I said, i don't know all that much about fords, so listen to the people that really know them. Just my .02 cents

347 stroker, afr 250 heads, tfi custom cam, and then either an efi or carb intake(holly 750 or performer) theres your 400 easy and less weight

I say 460... there are some OEM casting 460 "performance" heads made.. I'll have to look in the big head casting book at work to find out which ones they are, but you can almost literally stick your fist down the intake ports.
I think late model 460's are over 400 tq. stock as/is, so a 460 with a set of 3-angle "perforamnce" heads, a halfway radical cam and the valvesprings to match and you would easily be at 400 hp just from the cubes..
